Many people wonder how long Roti Saimai lasts and whether the roti wrappers and the spun sugar floss can be kept overnight. They can, but they are best eaten on the day of purchase. The wrappers are steamed and hold a lot of moisture, so after about 3 days they can develop mold and spoil. Airing them out in an open, dry spot to reduce the moisture helps extend their life.
How to store the roti wrappers
- Method 1: Separate the wrappers into single sheets, layer them between pieces of plastic wrap or in a plastic bag, and keep them in the freezer. They will keep for 1 to 2 months.
- Method 2: Leave the wrappers in front of a fan for 30 to 60 minutes to reduce their moisture, then seal them in a vacuum bag and refrigerate. They will keep for about 3 days.
- Method 3: Simply seal them in a vacuum bag and refrigerate.
How to reheat the roti wrappers
- In the microwave: Place the chilled wrappers on a plate and microwave for about 30 seconds. For extra softness, put a small glass of water in the microwave alongside them.
- In a steamer: Steam the frozen wrappers for about 5 minutes.
- In a rice cooker: Let the wrappers come to room temperature, then lay them on top of the rice in the cooker, close the lid and leave until they soften.
How to tell if the wrappers have gone bad
If you open the bag and the wrappers are slimy, smell off, show any sign of mold or have changed color, do not eat them.
