This spring pasta bake combines the sweetness of roasted cherry tomatoes with the salty tang of feta cheese, finished with fresh basil. It is an easy, relaxed lunch that tastes like sunshine.

Ingredients

  • 500 g (1 lb) cherry tomatoes
  • 100 g (3.5 oz) feta cheese
  • 250 g (9 oz) pasta
  • 2 tablespoons olive oil
  • A handful of fresh basil leaves
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 200°C (400°F). Spread the cherry tomatoes in a baking dish, drizzle with olive oil, season with salt and pepper and toss to coat.
  2. Roast the tomatoes for about 20 minutes, until the skins begin to wrinkle and burst.
  3. Meanwhile, cook the pasta in a large pot of salted water according to the package directions. Drain.
  4. Combine the roasted tomatoes, garlic and pasta, add the crumbled feta and toss gently.
  5. Return the mixture to the baking dish and bake for another 10 minutes, until the feta is soft and melting.
  6. Scatter the fresh basil over the top and serve.

Tips

  • Use more or less feta to suit your taste.
  • Dried basil can stand in for fresh, though the flavor will be a little different.
