- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
- 1 head lettuce
- 2 small cucumbers
- 200 g (7 oz) cherry tomatoes
- 1 handful fresh mint leaves
- 2 tablespoons lemon juice
- 1 teaspoon honey

- Rub the chicken breasts with the olive oil, oregano, rosemary, garlic powder, salt, and pepper and let them marinate for 15 minutes.
- Preheat the oven to 200°C (400°F). Place the chicken in a baking dish and roast for about 25 minutes, until golden and cooked through.
- While the chicken roasts, make the salad: wash and tear the lettuce, slice the cucumbers, halve the cherry tomatoes, and chop the mint.
- Whisk the lemon juice with the honey and a pinch of salt, pour over the salad, and toss well.
