- 2 whole sea bass (about 800 g / 1.75 lb total), cleaned and scaled
- 1 fresh lemon, sliced
- 2 tablespoons olive oil
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 garlic cloves, sliced

Instructions
- Preheat the oven to 200°C (400°F).
- Rinse the sea bass, pat dry with paper towels, and place on a baking sheet.
- Season the cavity of each fish with salt and pepper, then stuff with the lemon slices, garlic, rosemary, and thyme.
- Brush the outside of the fish with olive oil and sprinkle with a little more black pepper.
- Roast for about 20 minutes, until the flesh is opaque and flakes easily.
- Transfer to a platter, garnish with extra lemon slices and fresh herbs, and serve.
Tips
- Season both inside and outside the fish so the flavor is evenly distributed.
- Feel free to swap in other herbs such as oregano or dill, depending on what you have.
