Ingredients
- 500 g (1 lb) fresh peas
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- 500 ml (2 cups) vegetable stock
- 1 small handful fresh mint leaves
- 1 small handful fresh parsley
- Salt, to taste
- Ground black pepper, to taste

- Heat the olive oil in a large pot over medium heat and cook the onion and garlic for 2 to 3 minutes, until the onion is soft.
- Add the peas and vegetable stock. Bring to a boil, then reduce the heat and simmer for about 10 minutes, until the peas are tender.
- Add the mint and parsley and blend until smooth with an immersion blender or in a regular blender.
- Season with salt and pepper to taste, ladle into bowls and serve.

- A squeeze of lemon juice adds extra brightness.
